The breakfast egg as brain food? A new analysis involving nearly 100,000 people points to a surprising link: eating eggs regularly could help keep the brain sharp well into old age. Here’s what the research shows — and what role choline may play
Berries, nuts, olive oil, leafy greens: anyone looking to support their brain through diet tends to end up with a pretty plant-heavy shopping list. The humble breakfast egg rarely makes an appearance. And yet this everyday food may be more relevant to brain health than previously thought.
A 2026 review published in the Journal of Human Nutrition and Dietetics brought together the existing research on the subject, drawing on 21 studies with a total of 99,453 participants. The results were notable: people who ate eggs regularly showed somewhat better cognitive health outcomes. The most favorable association appeared at around 50 to 60 grams of egg per day — roughly one egg.
One egg a day for the brain — that would be a wonderfully simple dietary rule. The science, however, isn't quite there yet.
In the long-term studies included in the analysis, consuming around 50 grams of egg per day was associated with an approximately nine percent lower risk of declining cognitive performance.
A 2025 review involving more than 38,000 adults also found evidence suggesting that moderate egg consumption may be linked to better memory and verbal performance, as well as a lower risk of dementia. That said, this pattern did not hold across all studies. Most importantly, the data are predominantly observational — they can point to an association, but cannot prove that eggs themselves protect the brain.
If eggs do offer some advantage, part of the answer may lie in the yolk: choline. This essential nutrient is needed, among other things, for cell membranes, and it serves as a precursor to acetylcholine — a neurotransmitter that plays a key role in memory and learning.
There is also intriguing data on choline independent of egg consumption. In a large cohort study involving 125,594 people, a moderate choline intake of approximately 333 to 354 milligrams per day was associated with a lower risk of dementia and better results across several cognitive tests. Here too, however, the data made clear that more is not necessarily better.
That brings us to the question that has followed eggs for decades: what about the cholesterol? Egg yolks do contain a substantial amount. However, it does not automatically follow that moderate egg consumption raises cardiovascular risk.
The German Nutrition Society (DGE) also stresses that no fixed upper limit for egg consumption can be established on health grounds alone. Its reference value of one egg per week is not a health-based maximum, but part of a dietary model that also accounts for environmental factors. For individuals with elevated cholesterol levels or a high personal cardiovascular risk, however, egg consumption should be considered on an individual basis.
The new data at least offer some intriguing indications. Around one egg per day fell within the range in which cognitive decline was least frequently observed. Whether eggs can genuinely help keep the brain sharp into old age is a question that further research will need to answer.
Until then, the egg is not a new brain superfood. It is, however, a nutrient-rich food that fits comfortably into a balanced diet — and one that has become a surprisingly compelling subject for brain research.
