Healthy & Quick: Tomato Tonnato

The German soup blogger Theresa von Wangenheim cooks broths, purees, and stews in all colors. She has now created over 200 recipes and posted them on her Instagram account "Sssssoupsssss" (with five "s") for others to recreate.

Vitello Tonnato – but completely without meat

The slightly different Vitello Tonnato, which tastes just as delicious as the Italian original: but mayonnaise and meat-free, light and digestible. Best served cold in summer – with a nice dry white wine.

Ingredients (for 2 people as a starter)

1 tbsp lemon juice
1 jar of high-quality tuna in olive oil
1 tsp Dijon mustard
1 clove of garlic, peeled
Olive oil (4-6 tbsp)
4 tbsp small capers, drained
Sea salt & black pepper
Tomatoes of choice (large sliced thinly or cherry tomatoes quartered)

Preparation:

 

  1. Put lemon juice, tuna, garlic, and 2 tbsp capers into a food processor. Slowly add olive oil while mixing until the paste is smooth and pourable. Season with salt and black pepper.
  2. Pour the tonnato sauce onto a plate, add sliced tomatoes on top, and scatter the remaining capers over.
